Yields: 1 cup

Ingredients

1 cup unroasted, unsalted pumpkin seeds

3 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

Directions:

Preheat the oven to 275˚F.

Wash the pumpkins seeds and pat dry with a paper towel.

In a bowl, mix the olive oil, garlic powder, and kosher salt. Add the pumpkin seeds and toss to coat the seeds in the oil mixture.

Pour the pumpkin seeds evenly onto a baking sheet and place in the oven to bake for 30 minutes, stirring every 10 minutes and watching carefully to avoid burning. Remove the seeds from the oven when they are golden-brown and fragrant and allow to cool 10 minutes before serving.
